INTRODUCCIÓN.- Las frutas y las verduras son una parte fundamental de nuestra alimentación. Sin embargo, los uruguayos no consumimos una cantidad suficiente
debido a una diversidad de motivos. Esta publicación tiene por finalidad revalorizar estos alimentos, derribar mitos que muchas veces hacen que no los seleccionemos
como parte de nuestra alimentación, y proponer ideas para motivarnos a consumirlos. El libro plantea el tema desde una perspectiva de sistema alimentario,
lo que implica considerar las diversas actividades y actores que hacen posible la producción, transformación, distribución, elaboración y consumo de los alimentos. Para escribilo contamos con la participación de especialistas de diversas disciplinas y ámbitos de trabajo, con el propósito de dar una perspectiva integral sobre la temática.
En el Capítulo 1 abordamos el rol de las frutas y las verduras como parte de una alimentación placentera, saludable y sostenible. En el Capítulo 2 buscamos acercarnos a la producción de frutas y verduras, intentando visibilizar el trabajo que realizan día a día miles de familias para que tengamos en nuestras mesas una amplia variedad de estos alimentos durante todo el año. En el Capítulo 3 reflexionamos sobre la comercialización de frutas y verduras, mostrando las ventajas de formas alternativas
de consumo que buscan reducir las distancias entre productores y consumidores. En el Capítulo 4 destacamos la importancia de la cocina casera, intentando brindar ideas y habilidades para la preparación de frutas y verduras en familia, sin distinción de género. Finalmente, en el Capítulo 5 nos centramos en el desperdicio de frutas y verduras, planteando una serie de recomendaciones para ayudar a reducir la cantidad de alimentos que desperdiciamos en nuestros hogares. En conjunto, los
cinco capítulos buscan hacernos pensar sobre las implicancias ambientales, económicas y sociales de nuestras costumbres sobre qué comemos, cómo comemos, dónde compramos o cuánto desperdiciamos. Galactomannans from the endosperm of mature seeds of Prosopis affinis were isolated following different extraction procedures in yields of up to 64%. The polysaccharides were characterized by HPLC, GC-MS, and NMR spectroscopy, and their physicochemical properties were studied by SEC/MALLS-QUELS/RI
and rheological methods. The monosaccharide composition of the extracted galactomannans showed only mannose and galactose in a ~1.5 ratio, similar to galactomannans found in guar gum and obtained from other Prosopis species. The structural characterization showed that these polysaccharides are composed by a b-(1/4)-linked mannose backbone with galactopyranosyl residues attached through a (1/6) linkages. The weight-average molecular weight (Mw) of the P. affinis galactomannans went from (1.6 ± 0.2) x 106 to (1.8 ± 0.1) x 106 g/mol, and the intrinsic viscosity, in the 9.9 to 10.7 dL/g range, was comparable to that reported for other extracts from the Prosopis genre. Although the molecular weight distribution and intrinsic viscosity were dependent on the extraction procedure, the mannose-togalactose ratio was almost invariant. Conformation plots showed that the polymer extracted at higher temperatures is more cohesive, a characteristic that could be attributed to a greater number of polymerpolymer interactions. Our findings show that the P. affinis galactomannan has nearly monomodal molecular weight distribution, functional properties similar to those of guar gum, and can be isolated from an abundant and readily available non-traditional source. It therefore represents a promising new biomaterial for the food and pharmaceutical industries that can be produced from the regional native flora in a sustainable way.
